Chocolate CocOatNut Dairy-Free Lactation Cookies


I am so happy that my dairy-elimination diet is working (more on that in another post) but I missed my favorite lactation cookies. I googled a couple different recipes and took pieces from each to make these chocolate, coconut, oatmeal, almond, and walnut cookies.
I noticed after I cooked them that the cooking spray does contain soy-lecithin otherwise they would be perfect (they are dairy and egg free!). I would just use extra-virgin olive oil, or parchment paper in the future. 


Chocolate CocOatNut Dairy-Free Lactation Cookies
MAKES 24 COOKIES
1.5 cups old fashioned oats
1/2 cup nutritional yeast
1/3 cup (plus 2 tbsp) ground flax
1 tsp baking soda
1 tsp salt
1 cup light brown sugar
1/2 cup cocoa
2 cups sweetened flake coconut
8 tbsp almond butter (smooth)
1 cup dark chocolate almond milk
1/2 tsp vanilla extract
6 tbsp water

Directions: 
1) Preheat oven to 350 degrees F. 
2)  In a small bowl, mix 2 tbsp ground flax with 8 tbsp water (this acts as the "egg" in the cookies). Let sit for 2 minutes. 
3) In a medium bowl, whisk together the ground flax and water "egg" mixture, almond butter, dark chocolate almond milk, and vanilla extract until smooth. Set aside. 
4) In a large bowl, mix together the oats, yeast, ground flax (1/3 cup), baking soda, salt, brown sugar, cocoa and coconut flakes. 
5) Slowly pour the wet mixture (from the medium bowl) into the dry mixture (the large bowl); mix with a wooden spoon. 
6) Spray cookie sheet with olive oil cooking spray (or for a soy-free recipe, use extra virgin olive oil). 
7) Scoop batter on to cookie sheet using ice cream scoop (for nice hearty size cookies). 
8) Bake for 22 minutes. 
9) Remove pan from oven and use spatula to remove cookies while warm, place on cutting board to cool.
